Garlic Honey Roasted Carrots

Honey roasted carrots make the perfect side dish for a variety of dinners, but none so perfect as a holiday dinner.

Prep takes no time at all and cooks in just under an hour, depending on thickness and how well done you enjoy your carrots. A few things to note when cooking whole carrots. Remove the greenery or the stems from the top before baking. Peel the carrots before you bake them. Leaving the skins on carrots leaves a tough exterior that is difficult to chew. It also results in a brighter, more appealing color when serving.

You can test for doneness by sticking a toothpick into the thickest part of the carrot. Like them a bit crunchier? The toothpick should only go in at least 1cm. More done? The toothpick will go through easily.

Once you arrange your carrots onto your baking sheet, brush them with your olive oil and honey mixture using a basting brush. GARLIC HONEY ROASTED CARROTS

Looking for something to bring to the table for the holidays? Grab some rainbow carrots to make these garlic honey roasted carrots that are sure to impress.

INGREDIENTS

  • Carrots peeled
  • 1/2 cup Olive oil
  • 1/4 cup Honey
  • cloves Garlic minced
  • Salt to taste
  • Pepper to taste

INSTRUCTIONS

  1. Preheat oven to 350°F. 
  2. Combine olive oil, honey, and garlic into small bowl. Whisk until honey is completely incorporated into olive oil. 
  3. Place whole peeled carrots onto baking sheets. Brush with olive oil and honey mixture. Rotate carrots and repeat. Spoon remaining garlic on top of carrots. 
  4. Bake for 45-60 minutes until tender or cooked to your liking. Serve warm.
