Garlic Honey Roasted Carrots

Honey roasted carrots make the perfect side dish for a variety of dinners, but none so perfect as a holiday dinner.

Whether you make it for Easter, Thanksgiving, Christmas, a plate of honey roasted carrots can brighten any table top and bring a smile to any face. The best part? They are so incredibly easy to make. Prep takes no time at all and cooks in just under an hour, depending on thickness and how well done you enjoy your carrots. We love using rainbow carrots, not just for the health benefits, but because they are just so pretty and colorful.

A few things to note when cooking whole carrots. Remove the greenery or the stems from the top before baking. Peel the carrots before you bake them. Leaving the skins on carrots leaves a tough exterior that is difficult to chew. It also results in a brighter, more appealing color when serving.

You can test for doneness by sticking a toothpick into the thickest part of the carrot. Like them a bit crunchier? The toothpick should only go in at least 1cm. More done? The toothpick will go through easily.

Prep your carrots by giving them a quick rinse and removing any excess dirt with youThen peel them using a classic gadget like the Endurance® Vegetable Peeler.

Carrots being glazed with a honey mixture using basting brush

Once you arrange your carrots onto your baking sheet, brush them with your olive oil and honey mixture using a basting brush. We love the new Silicone Basting Brush because they're colorful and hold plenty of liquid in their silicone bristles. The Basting Brush is also incredibly easy to clean, as it's dishwasher safe.

Once your carrots roast up, they're ready to serve! Place them on a baking dish accompanied with the Endurance® Asparagus Tongs. Sure, they say "asparagus tongs" but this beautiful serving tool is perfect for any kind of long veggie or meat, like sausages, carrots, asparagus, green beans. The shape makes it easy to gather up food, while the acrylic handles provide a good grip. Plus, they're pretty and look great on a serving tray.

Now you're ready to serve up some gorgeous honey roasted carrots for a side dish to your perfect holiday meal!
